Honey Anzac Biscuits

Ingredients:

  • 1/4 cup of Stringy Bark Honey
  • 125g butter
  • 1/2 tsp bicarbonate of soda
  • 2 tbsp boiling water
  • 1 cup of rolled oats
  • 3/4 cup of desiccated coconut
  • 1 cup of plain flour
  • pinch of salt

Method:

  1. Preheat oven to 150c and line baking trays with baking paper.
  2. Melt the butter and honey in a pan over low heat stirring until mixture bubbles. 
  3. Add a pinch of salt.
  4. Add bicarbonate of soda with boiling water and add to mixture.
  5. Add coconut, flour and rolled oats into a seperate bowl.
  6. Pour mixture from pan into dry ingredients and stir in.
  7. Bake for 20 minutes or until cooked.
  8. Allow to cool then enjoy!
