Serves 6
Ingredients:
- 1/4 cup Red Gum Honey
- 2tbsp soy sauce
- 1tbsp rice vinegar
- 1/2tbsp sesame oil
- 2tbsp olive oil
- 1 small brown onion (diced)
- 2 gloves garlic (diced)
- 700g ground turkey
- 1/2 cup grated carrot
- 1/2 cup shredded cabbage
- 1/2 cup bean sprouts
- Leaf leaves for serving
- 1/3 peanuts (optional)
Method:
- Add honey, soy sauce, rice vinegar, sesame oil and whisk.
- In a large pan, over medium-high heat, add olive oil and onions. Once onions are translucent add garlic.
- Add in the ground turkey, shredded carrots and cook for about 7 minutes.
- Pour the honey and soy sauce mixture over the ground turkey and combine. Place the lid on the pan and simmer for 3 minutes.
- Top with bean sprouts, cabbage and peanuts and cover for an additional 3-5 minutes.
- Scoop turkey mixture into lettuce cups and enjoy!
