Potato Salad with Honey Mustard

INGREDIENTS 
  • 1 kg baby potatoes, lightly scrubbed
  • 6 tbsp light mayonnaise
  • 2 tbsp Honey Mustard
  • 2 shallots, finely chopped
  • 4 spring onions, trimmed and finely sliced

METHOD 

1. Halve the potatoes and place in a large saucepan. Cover with cold water, bring to the boil and simmer until tender (18-20mins). Drain well and set aside to cool. 

2. Mix mayonnaise and  Honey Mustard in a small bowl. Season well with salt and pepper. 

3. Once potatoes are cool, stir through the mayonnaise / mustard mix, shallots and spring onions. 

Optional extra's: crispy fried bacon, chopped up hard boiled eggs, thinly sliced celery, fresh dill
