Ingredients:
- 125g unsalted butter (softened)
- 1/3 cup brown sugar
- 1/4 cup Leatherwood Honey
- 1 egg
- 2 1/4 cup plain flour
- 1/2 tsp baking powder
- 1 tsp ginger powder
- 1 tsp bicarbonate soda
Icing Ingredients:
- 3/4 cup powdered sugar (sifted)
- 3 tsp milk
- 3 tsp Leatherwood Honey
Method:
- Preheat oven to 180°C. Line 2 baking trays with baking paper.
- Beat butter, sugar and Leatherwood Honey until creamy.
- Add egg and beat well.
- Sift in flour, baking soda and ginger powder. Stir to combine.
- Turn mixture out onto a lightly floured surface and knead gently until smooth.
- Roll dough out to 5 mm thick. Use cutters to cut out shapes and transfer onto tray.
- Bake cookies for 10-12 minutes until light brown.
- Remove from oven and transfer to wire rack to cool completely.
Icing Method:
- Mix powdered sugar, Leatherwood Honey and milk together with a fork.
- Adjust consistency to your preference and decorate your cookies.
