Golden Honey Christmas Cake


  • 2/3 cup Orange Blossom Honey
  • 75g packet dried fruit medley
  • ½ cup raisins, chopped
  • 1 1/2 cups of plain flour
  • 250g chopped salted butter
  • 1/4 cup caster sugar
  • 2 tbsps Marmalade
  • 4 eggs
  • 1/2 cup self raising flour
  • 1/4 tsps baking powder
  • 2 tbps of Sherry or Brandy
  • 1 ½ cups royal icing mix

  • 4 tbsp cold water



    1. Preheat oven to 150°C and line a round cake tin with baking paper.
    2. Comine all fruit with 1/4 cup of plain flour to coat all fruit.
    3. Beat the butter, honey, sugar and marmalade in a large bowl with an electric mixer until combined. Beat in the eggs one at a time.
    4. Add combined sifted remaining plain flour, self-raising flour, baking soda with sherry/brandy. Stir until combined. Add to bowl with fruit mixture. Mix well. Spoon into prepared pan. Smooth over top.
    5. Cook in oven (150C) for about 2 hours, or until a skewer inserted into the centre comes out clean. Cover loosely with foil during cooking if top starts to over-brown. 
    6. Over the coming weeks prick with skewers and drop in Sherry or Brandy.
    7. To make icing, combine icing mixture and water in a small bowl withan electric mixer. Beat the mixture for about 2 minutes, drizzle on cake.
    8. Add walnuts, cherries or any Christmas decororations as you want.
