Banana Bread

Banana Bread

Ingredients 

  • 1/2 cup of Local Flora Honey
  • 4 Ripe large bananas
  • 1tsp coconut sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp maple syrup
  • 1/3 cup of coconut oil
  • 1/3 cup of rolled oats
  • 1/2 cup of buttermilk
  • 1 2/3 cup of flour
  • 2 tbsp of coconut flour
  • 3/4 tsp of baking soda
  • 3/4 tsp salt
  • 1/4 ground flax
  • 2 eggs beaten
  • 2 tbsp of maple syrup
  • Chopped walnuts

Method 

1) Preheat oven to 220c.

2) Slice the bananas and place in a greased loaf pan. 

3) Mix together coconut sugar, cinnamon and 1/2 tsp of maple syrup. Sprinkle on top of bananas.

4) Place in oven and cook for 35 minutes..

5) Remove from oven and reduce heat to 180c.

6) Mash cooked bananas and add coconut oil..

7) Mix together rolled oats with with buttermilk.

8) In a separate bowl mix flour. coconut flour, baking soda, salt and ground flax.

9) Add Local Flora Honey, eggs, 2tbsp maple syrup, oatmeal and buttermilk mixture to bananas.

10) Add to dry ingredients and mix well.

11) Pour into a bread tin.

12) In a small bowl mix together 1tsp of Local Flora Honey and walnuts.

13) Spread the honey and walnut mixture onto the banana bread mixture.

14) Bake for 45-60 minutes
