INGREDIENTS
- 1/3 Cup Red Gum Honey
- 6 medium sweet potatoes
- 1/4 cup Olive Oil
- 1 tsp Salt
- 1 1/2 tsp cinnamon
- 1/2 tsp pepper
- Fresh rosemary (optional for garnish)
METHOD
- Preheat oven to 190 degrees (C).
- Place potatoes in a large bowl.
- Whisk together honey, oil, salt, cinnamon and pepper; add to potatoes and toss to coat.
- Transfer to a greased baking pan. Roast until tender, 45-50 minutes, stirring once.
- Garnish with fresh rosemary
