Honey Roasted Sweet Potatoes

INGREDIENTS 

  • 1/3 Cup Red Gum Honey 
  • 6 medium sweet potatoes
  • 1/4 cup Olive Oil
  • 1 tsp Salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp pepper
  • Fresh rosemary (optional for garnish) 

METHOD 

  • Preheat oven to 190 degrees (C).
  • Place potatoes in a large bowl.
  • Whisk together honey, oil, salt, cinnamon and pepper; add to potatoes and toss to coat.
  • Transfer to a greased baking pan. Roast until tender, 45-50 minutes, stirring once.
  • Garnish with fresh rosemary
