
Honey Glazed Ham

Ingredients:
- 2/3 cup Red Gum Honey
- 1/2 cup brown sugar
- 1 tablespoon Dijon mustard
- 1 whole leg ham, on the bone (roughly 8kg)
- Whole cloves (to stud)
Method:
- Preheat oven to 170°c. Line a large roasting dish with baking paper.
- Mix the sugar, Red Gum Honey and mustard in a bowl until the sugar dissolves.
- Using a small knife, cut around the ham rind, 10cm from shank end. Run a knife under the rind to separate it from the fat. Peel back and discard the rind.
- Score the fat in a diamond pattern about 5mm deep. Stud the cloves in the centres of the diamond. Place ham in roasting dish and wrap shank end with foil.
- Brush one-third of the glaze over the ham. Bake, brushing with glaze every 25 minutes, for approximately 1 hour 30 minutes.
