Honey Cookies

Ingredients:

  • 1/2 cup softened unsalted butter
  • 1/2 cup packed dark brown sugar
  • 1/2 cup Iron Bark Honey
  • 1 egg
  • 1 1/2cup all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon

Method:

  1.  Preheat oven to 180°C.
  2. Beat together butter, brown sugar, Iron Bark Honey and egg in a medium bowl until smooth, scraping sides occasionally.
  3. Stir in all remaining ingredients.
  4. Line a baking tray with baking paper. Drop a spoonful of dough leaving some space in between.
  5. Bake for 7-10 minutes until the cookies are set and edges begin to brown. They will look still look shiny when done.
  6. Remove from baking sheet and leave to cool completely.
  7. Best enjoyed fresh with a cup of tea or you may store them in an airtight container for a few days.
