Ingredients:
- 1/2 cup softened unsalted butter
- 1/2 cup packed dark brown sugar
- 1/2 cup Iron Bark Honey
- 1 egg
- 1 1/2cup all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
Method:
- Preheat oven to 180°C.
- Beat together butter, brown sugar, Iron Bark Honey and egg in a medium bowl until smooth, scraping sides occasionally.
- Stir in all remaining ingredients.
- Line a baking tray with baking paper. Drop a spoonful of dough leaving some space in between.
- Bake for 7-10 minutes until the cookies are set and edges begin to brown. They will look still look shiny when done.
- Remove from baking sheet and leave to cool completely.
- Best enjoyed fresh with a cup of tea or you may store them in an airtight container for a few days.
