Ingredients:
- 1/2 cup Eucalyptus Honey
- 1 cup pumpkin puree
- 1/3 cup melted coconut oil
- 2 eggs
- 1/4 cup milk
- 1tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4tsp ground allspice
- 1tsp baking soda
- 1tsp vanilla extract
- 1/2 tsp salt
- 1 3/4 cups flour
- 1/3 cup oats
Method:
- Preheat oven to 165°C and line a muffin tray with 12 muffin linings.
- In a bowl, whisk the oil and Eucalyptus Honey together. Add eggs and whisk.
- Add pumpkin puree, milk, cinnamon, ginger, nutmeg, allspice, baking soda, salt and vanilla extract.
- Add flour and oats and combine.
- Divide batter between the muffin cups and sprinkle with pumpkin seeds, bake for 22-25 minutes.
- Once muffins are cooled, enjoy!
